Craft Night In: Gingerbread Latte Recipe

I used to love the Starbucks Gingerbread Latte. For years, it would show up every November, and grabbing that first one of the season became one of those little signs that Christmas was officially on its way....and then, in 2021, it disappeared.

I was genuinely a little heartbroken. We were still living through the weirdness of the pandemic, and at that point I think we were all hanging onto whatever little traditions and comforts we could find. Apparently, one of mine was a gingerbread latte.

So I did what any reasonable person missing a seasonal coffee would do: I went looking for a recipe to make my own and I hit the jackpot.

This homemade Gingerbread Latte has all of those warm, cozy spices I loved in the original, but it tastes so fresh that I actually prefer making it at home now. It’s become one of my favourite drinks during the fall and winter months and it would make a great addition to a craft night in!

Gingerbread Syrup

(From a recipe blog called Hunger Thirst Play)

  • 1/4 cup of lightly packed brown sugar (not yellow, brown)
  • 1/2 cup of white sugar
  • 3/4 cup of water
  • 3 tbsp of molasses
  • 1 tsp of ground ginger
  • 1/2 tsp of cinnamon
  • 1 tsp of vanilla extract

Instructions:

  • In a medium size saucepan, combine the ingredients. Heat over medium heat, stirring until combined.
  • Bring to a slow boil, reduce the heat and simmer for 5 minutes - stirring occasionally.
  • Transfer to a heat proof storage container. I use a glass jar and put it in the fridge once it has cooled down. 
  • Shake well before each use.

Latte Instructions:

  • In a large coffee cup, add two shots of espresso. 
  • Stir in 3 tbsp of the gingerbread syrup (I microwave it for about 8 seconds to warm it up)
  • Take 3/4 cup of milk, froth it and pour it into the cup. 
  • Scoop the foam of the milk onto the top of the latte and add nutmeg or cinnamon over the foam.
  • If you wish, add whipped cream.
